Hoopoe slenders in the glass with a pomegranate shine and blackberry red depth. The top notes are intriguing with hint of fresh mint-leaves and sage and followed by spicy middle notes that reveal cinnamon, clove, anis, cardamom and citrus. On the pallet it is full of red fruit hinting cherry sauce, cedar, currant and black currant. A scent of newly distilled grappa, and the warmth of wood shows on the aftertaste. Medium body, mellow on the mid palate, tannins laying softly on the chin, and an acidity well integrated. Serve in a Burgundy glass and rather a degree to cold than too hot.

    The alcoholic fermentation and malolactic fermentation were both carried out in stainless steel tanks. The wine was racked twice and has been aged in stainless steel – 1/3 of the wine aged around 16 months in stainless steel meanwhile the latter 2/3 was matured 11 months in stainless steel and then 5 months in French barricques of 3rd. passage.

Food pairing

The wine drinks well on its own as well as it does excellent as a food companion. Try Hoopoe with bruschetta, charcuterie and mushroom starters. Other great matches are grilled vegetables, game meat such as roe deer and fallow deer, and dishes evolving around good poultry, veal or pork.
